market report 3.31.2012

I deeply truly love going to the farmer’s market every week. It is such a pleasant experience to wake up early and walk across an empty town to a place that is buzzing like a beehive. Food lovers come together and there are no faces not wiped with a grin (except small children who were dragged along by their mothers). I think that it is such a beautiful opportunity to be able to have a relationship with the people who grow the food that you eat! I am going to start doing weekly “market reports” to show off my bountiful harvest!

Vegetable Juice: The Real Superfood.

Vegetable Juice: The Real Superfood.

Superfoods seem to be on everyone’s minds these days as the golden nugget for health. But let’s be real, you don’t need goji berries or maca powder, the true superfood is vegetable juice.

raw lemon-dill blended soup for spring

In preparation for tonight’s big event (spring equinox starting at 1:14 a.m.), I am slurping down a raw blended  soup (or savory smoothie) to shove a whole bunch of veggies into my body and hydrate my chlorophyll lovin’ cells. I’ve been seriously diggin’ on green smoothies lately because they are so easy to make, pack, and devour. Plus they leave me feeling satiated (I mean 4+ cups of liquid veggies in one sitting? Yes please!) but light enough to fly with unicorns.

via straw is my preferred method of soup consumption.

raw lemon-dill blended soup

2 tomatoes
1 cucumber, peeled
1 avocado
4 mini bell peppers
2 stalks of celery
a handful of spinach
a handful of kale
a handful of dill
juice of 1 lemon
a clove of garlic

Blend all ingredients together in a high-speed blender or food processor.
It helps to start with the liquid-y ingredients first and add more stuff slowly but surely.

Spring equinox means that the daylight hours and the nighttime hours will be equal tomorrow, with each day moving forward becoming longer and longer until the summer solstice. Spring represents fertility, renewal and release of the old.

What in your life is not serving you? What would you like to release on the spring equinox?
